I am beginning this repair of a fantastic Shun Chefs knife. The blade is 8" long and has a significant (2-3 mm) chip on the cutting edge. I will begin by removing metal using a course diamond plate. I will need to remove metal all along the cutting bevel to get past the flaw and create a new bevel and cutting edge while maintaining the original shape of the blade.
Update:
The repair is complete and everything went great. It's a lovely knife and lives up to it's name.
